Talk “Dirty” To Me: A Sneak Peek at What We’re Pouring

What do fossilised seabeds, an active volcano, vivid red earth and sun-bleached chalk have in common?

Some very delicious wine.

We’ve partnered with BOCA to create Talk “Dirty” To Me, a five-course dining experience where we’ll indulge in wines grown in some of the most fascinating soils on the planet — each one perfectly paired with a dish from BOCA’s award-winning kitchen.

On the table? Chablis grown in an ancient Jurassic seabed filled with fossilised oyster shells. Greco di Tufo from soft “tufo” soils — thick layers of volcanic ash that landed over 15,000 years ago. Etna Rosso grown on the slopes of Mount Etna, which is still very much an active volcano. Coonawarra Cabernet rooted in striking terra rossa — that famous bright red earth over limestone. And Sherry from the sun-bleached, sponge-like white chalk soils of southern Spain.

We’ll explore what makes these soils so unique and how they influence what you taste in the glass — keeping it factual, approachable and genuinely fun.
